Happy Holidays from your favorite cooking school!!! As your family gathers around for the season, be sure to take time to eat some delicious foods. Eating with family and loved ones is a wonderful gift to give the family. Try a new recipe and get the kids to help. It will be a holiday to remember.

Winter Stew
Here is a great winter recipe for a day after the slopes or for a day in the snow.
Curried Vegetable Stew
4 Tablespoons Oil, or use vegetable stock to saute'
2 Medium Onion, chopped
6 Cloves Garlic, minced
4 Cups Baby Carrots
2 Medium Eggplant, peeled, diced & tossed with salt
4 Medium Potato, scrubbed and diced
2 Large Green Bell Peppers, diced
2 Teaspoons Ginger, grated
4 Whole Chili Peppers, seeded and minced
4 Teaspoons Curry Powder
2 Teaspoons Garam Masala
3 Cups Water
2 Cups Frozen Peas, thawed
1/2 Cup Cilantro, chopped (optional)
1 Dash Salt, to taste
1 Cup Yogurt, soy or goat for topping
6 Cups Brown Rice, uncooked
1 . Heat the oil in a soup pot and add the onion, garlic, bell peppers, curry and baby carrots. Saute' over medium heat until the onion is golden, stirring frequently, about 10 minutes.
2. Add the eggplant, potatoes, 1/2 of the bell pepper, ginger, chilies, and curry powder and water. Bring to a simmer, then cook covered, at a gentle simmer until the vegetables are tender but not overdone.
3. Stir in the peas, cilantro & remaining 1/2 of bell peppers. Season to taste with salt. Taste for spiciness and adjust the seasonings as desired. Mash some of the diced potato with a wooden spoon to thicken the cooking liquid.
4. Simmer over low heat, uncovered, for an additional 5 - 10 minutes. The vegetables should be enveloped in a thick liquid.
5. Serve in bowls alone or over hot cooked grains. If desired, top each serving with a dollop of creme fraiche, goat yogurt or soy yogurt with a sprig of cilantro.
Note: If you suffer from arthritis, this recipe may not be a good choice for you, because of the use of nightshades. |
